            VINIFICATION

            The vinification process of our Bordeaux style blend is respective of each variety that makes it up. At the completion of

            barrel maturation for each variety, barrels are selected to make up the blend depending on their characteristics.

            CHARACTERISITICS

            A fragrant nose showing nice development with loam and tobacco characters combine well with lifted characters of dark fruits and cherry. The palate is rich and ripe with great stucture and balance. The different varieties of the blend combine well to ensure a mouth filling experience.

            GRAPES - 100% Merlot

            VINIFICATION

            Fruit sourced from one of our dry grown Margaret River vineyards was crushed and de - stemmed into two separate ferments.

            One fermented at a slightly cooler temperature remained on skins for 10 days while the other was pressed out after 8 days. As with all Willespie reds, the Merlot was basket pressed, after pressing the parcels were combined and sent to French oak barriques (25% new) where the wine remained for 20 - 24 months.  Prebottling  the wine was transferred from barrel and blended.

            CHARACTERISTCS

            With a nose of spicy fruit cake and plum pudding it is wine of great fruit intensity. On the pallet a foll bodied Merlot with smooth , ripe tannins and generous black fruit .

            OAK  MATURATION

            20  -  24  Months

            GRAPES - 100% Shiraz

            VINIFICATION

            Our front block Shiraz fruit was divided into 4 separate ferments, with each ferment handled slightly differently. Different commercial yeasts were used as well as one batch left to ferment naturally. Each batch was crushed and destemmed and

            allowed to ferment at different temperatures for 8 days before basket pressing and then being transferred to Frence oak barriques (30% new). After 20 months the final blends were decided on and the wine was bottled.

             

            CHARACTERISTCS

            A spice driven nose as one would expect from an Australian Shiraz with notes of white pepper and cardamom. The palate is rich and luscious with black and savoury fruit notes supported with ripe tannins that round out this Shiraz.

            20 Months

            FOOD MATCH

            Game meats such as venison or kangaroo. Also matches well spicy Asian dishes.

            VINIFICATION

            The fruit taken from our dry grown Margaret River vineyard was crushed and destemmed and fermented using cultured yeasts. After 8 days the ferment was basket pressed to tank where the completion of the secondary fermentation took place. The wine was then transferred to

            French barriques for 30 months. The barrels chosen for the final blend were selected particularly because they exhibited strong texture,structure and complexity.

            CHARACTERISTCS

            Very fragrant ripe dark red fruits, of mulberry and raspberry with a spicy vanilla character on the nose, with a big rich and balanced palate with a velvety mouth feel. Hints of dark chocolate and plums add to the weighty palate of this Cabernet Franc.

            GRAPES - 100% Cabernet Sauvignon

            VINIFICATION

            Parcels of Cabernet Sauvignon from both of our Margaret River vineyards was used in producing this wine. Fruit was crushe and de-stemmed and fermented in stainless steel static fermenters. Pumped over every 8 hours to increase extraction the ferment was finally basket pressed after 14days on skins. The wine finished both primary and secondary ferment in tank before being moved to French barriques (30% New) for maturation. After 30 months the wine was then blended and prepared for bottling.

            CHARACTERISTCS

            An approachable example of a full bodied Cabernet Sauvignon that displays tremendo us plum and black current intensity through the mid

            palate with ripe and well structured tannins. Its nose is mature and combines hints of cocoa and vanillin.

            VINIFICATION

            Made from the Winery block Cabernet Sauvignon, part of the original planting on the property in 1976. Fruit from the dry grown vineyard was handpicked then crushed and de-stemmed into a static stainless steel fermenter. After fermenting on skins for 8 days the wine was basket pressed to tank for the completion of malolactic fermentation before being moved to 100% French oak barriques for the maturation process.

            After 20 months, the highest quality barrels showing fruit, balance and structure were selected for the final blend.

            CHARACTERISTCS

            The nose displays rich ripe dark red berries, and light herbaceous characters. The pallet is a round robust and mouth filling. Notes of dark

            plum, blackcurrant and cassis are supported by structured acidity and balanced oak.
